APPLE CRUMBLE


A delicious weekend treat for the whole family.

(serves 6-8)

Ingredients:

Filling:

  • 6 fugi apples

  • 200ml organic apple juice

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon ground cinnamon

Crumble:

  • 1 1/2 cups rolled oats

  • 1/4 cup desiccated coconut

  • 1/4 cup walnuts

  • 1/2 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

  • 3 tablespoons coconut oil

  • 3 tablespoons organic maple syrup

Method:

1. Preheat oven to 180 c.

2. Cut apples into wedges (leave skin on) and remove the centre core.

3. Place apples into a large pot, combine apple juice, vanilla and cinnamon.

4. Cook on medium to low heat for about 20-30 minutes (with the lid on for the first 10 minutes) and cook until the apples have softened.

5. Place apples into a baking dish.

6. To make the crumble, combine rolled oats, coconut, walnuts, cinnamon, vanilla, maple syrup and coconut oil (melted) into a food processor or nutribullet.

7. Process until the mixture is combine and crumbly.

8. Scatter the crumble over the top of the apples.

9. Bake for 30 minutes or until the crumble is golden.

10. Remove from the oven and cool for 10-15 minutes before serving.

Serve the apple crumble with some yoghurt or low fat custard and enjoy!
